Let’s welcome the Voice-Tribune’s move to NuLu late in 2011 with a word of praise for another long-time St. Matthews institution that’s thriving there. The classy bistro Wiltshire on Market is a direct descendant of Susan Hershberg’s much-loved Wiltshire Pantry, which got its start on Wiltshire Avenue in St. Matthews.
Its always appealing menu is based on American culinary traditions with international touches, and a strong emphasis on fresh, local produce and meat. Some days you feel like a nut, as the old Almond Joy commercial told us, and some days you don’t. As for me, some days I feel like a bloody haunch of barely seared cow flesh. Some days I feel like alfalfa sprouts and tofu.
Is there a name for a wannabe vegetarian who likes meat way too much to give it up? I’m thinking “herbocrite,” and I’m willing to bear the label with pride.

We found a parking place right in front of Wiltshire on Market on a freezing Thursday evening, negotiated rock-hard ridges of icy snow and made it to the front door still standing. As soon as we stepped inside, a welcoming warmth enveloped us and drove away the cold.
Soon the three of us were ensconced on a soft, tall banquette seat at an oddly shaped, not quite triangular table big enough for six or seven. We adjusted puffy pillows behind our backs and felt quite sybaritic indeed.
